Homemade flour tortillas. Easy to make, and way better than store-bought.
Ingredients
2 cups all-purpose flour
1/2 tsp salt
3/4 cup water
3 tbsp olive oil
Preparation
Sift the flour and salt together in a mixing bowl.
Pre-heat a small amount of olive oil in a frying pan on medium-high heat.
Stir oil and water into the flour, mixing with hands when it gets doughy, until well combined.
On a lightly floured surface, knead the dough about 12 times, forming it into a ball.
Cut the ball in half, then cut the halves in half, then cut those in half again. You should have 8 small pieces of dough.
Using a rolling pin, gently roll one piece of dough into a thin, round tortilla (about 8" in diameter).
Transfer the tortilla to the pan and cook until lightly browned, then flip and cook the other side (about 1 minute per side).
Transfer the cooked tortilla to a plate, and repeat steps 6-8 until all pieces of dough are cooked.
Serve warm, or let cool, wrap, and store in the refrigerator (re-heat in a microwave when ready to use).
Makes 8 small tortillas.
