Fruity and subtly sweet loaf for dessert or breakfast.
Ingredients
1 ½ Cups flour
1 Cup sugar
1 ½ Tsp baking powder
½ Tsp salt
2 Egg (or 6 tbsp lightly beaten aquafaba)
1/3 Cup melted margarine
½ Cup yogurt (or vegan yogurt)
1 Cup fresh berries (raspberries, blueberries, etc.)
½ Tsp lemon zest
Preparation
Grease 9 x 5 inch loaf pan and line with parchment paper.
Preheat oven to 375 degrees F.
In a large mixing bowl, mix together the flour, sugar, baking powder, and salt.
Add the eggs and the margarine, then mix with a beater until combined.
Add the yogurt and lemon zest, and beat on low until just combined.
Fold in the berries with a spatula.
Pour into the loaf pan and spread evenly.
Bake for 60-70 minutes until golden brown, and centre springs back.
Store wrapped in parchment paper at room temperature.
Serve warm with margarine or ice cream.
