Cheesy Broccoli and Rice Casserole
A great tasting and healthy casserole that can be cooked in a slow-cooker
Ingredients
2 Cups whole grain brown rice
4 Cups fresh chopped broccoli
1 L milk (or soy milk)
1 L veggie chicken broth (or vegetable broth)
1 Cup flour
3/4 Cup margarine (melted)
1 tbsp salt
1 tbsp black pepper
4 Cups coarsely chopped onion
2 tbsp garlic powder
3 Cups grated cheddar cheese
Preparation
In a mixing bowl, whisk together flour, maragine and milk until smooth.
In a large slow-cooker, add all of the ingredients and the flour/milk mixture, stirring until well mixed.
Cover and cook on low for approximately 6 hours or on high for approximately 2 hours (until thick).
If baking, 350° F in a greased casserole dish (4 quart) covered for 1 hour.
