Caramelized onions and peppers with sausage poached in white wine.
Ingredients
4-5 Sausages
2 Tbsp margarine
1 Large onion
1 Large bell pepper
5 Cloves garlic
1 Tsp oregano
1 Tsp basil
¼ Cup white wine
Preparation
Grill or fry the sausages until nicely browned on all sides.
Cut sausages into ½” pieces.
Slice onions and peppers into ⅛” strips.
Finely chop garlic until minced.
Heat margarine in a skillet over medium-high heat, add the onion and pepper, and toss with a spatula for 4 minutes.
Add the garlic and toss for another minute.
Stir in the oregano, basil, and sausages.
Pour in the wine and cover, reduce heat to medium-low, and let cook for 15 minutes.
Use any kind of sausage you prefer.
Use whatever colour of bell pepper you prefer.
