Great, thick pie topping that browns nicely. Almost like the egg version!
Ingredients
¾ cup aquafaba (about 1 can)
½ teaspoon cream of tartar
1 cup icing sugar
½ teaspoon vanilla extract
½ teaspoon Xanthan gum (optional but recommended for stability)
Preparation
Add aquafaba, cream of tartar, and xanthan gum in a mixing bowl.
Use a handheld or stand mixer on medium speed and mix for 1 to 2 minutes until frothy.
While mixing, add the powdered sugar a little at a time, scraping down the sides of the bowl.
Continue to mix at medium-high speed until soft peaks form, then add the vanilla and mix just enough to incorporate it.
If using on pie, spread on top and create nice peaks by dabbing it with a utensil, then broil on high until peaks are browned (watch closely).
Makes enough for 1 large pie.
