Healthy and very tasty beans with savoury shallots and almond overtones. An easy way to 'fancy-up' a meal.
Ingredients
600 g fresh green beans
3 tbsp butter or margarine
1 1/2 cups sliced shallots
3 tbsp sliced almonds
Salt and pepper to taste
Preparation
Blanch beans
Prepare a wide bowl with ice water
Bring a pot of salted water to a boil (enough to cover beans)
Place beans in boiling water for about 5 minutes
Quickly transfer beans to ice water and bathe until cold, and drain
Melt butter over medium-high heat.
Add shallots and cook about 4 minutes until golden brown, stirring frequently.
Add beans and almonds, and cook for 2 minutes longer, stirring frequently.
Season with salt and pepper.
