Just like it says... A cheesy, meaty taco in pie form.
Ingredients
2 tbsp vegetable oil
1/2 diced onion
1/2 diced bell pepper
1 tsp chili powder
1/2 tsp cumin
1 pkg (340 g) Yves Veggie Ground (or other brand)
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
2 cups grated cheese or Cheez Sauce (vegan)
540 ml canned refried beans (black or pinto)
6 large tortillas
Preparation
Sauté the onion and bell pepper in oil for about 4 minutes, until tender.
Stir in chili powder and cumin, then cook for 1 more minute.
Add veggie beef, garlic powder, salt, and pepper, then cook for 5 more minutes.
Turn off the heat and stir in 1 cup of the cheese.
Remove the refried beans from the can into a bowl and mash it with a fork.
Pre-heat the oven to 375° F.
On a baking sheet, place one tortilla and spread 1/3 of the refried beans on top, leaving 1 cm uncoated around the edge.
Place another tortilla on top of the spread refried beans, and spread 1/3 of the beef/cheese mixture on top, leaving 1 cm uncoated around the edge.
Repeat steps 6 and 7 until all tortillas are layered on top of one another, with the top one covered in the beef/cheese mixture.
Take the remaining cheese and sprinkle or drizzle it on top of the pie.
Bake at 375° F for 30 minutes.
Cut like a pie and serve.
Serve with sour cream, salsa, diced fresh tomatoes, guacamole, avocado slices, and/or chopped green onion.
Serves 8 with a side.
