A tasty rice side that's easy to make.
Ingredients
2 tbsp vegetable oil
2 tbsp chopped onion
1 1/2 cups raw white rice (not instant)
2 cups veggie chicken broth (or vegetable broth)
1 cup chunky salsa
Preparation
Heat oil in a medium-sized sauce pan.
Add onion and saute until tender (about 4 minutes).
Add rice and saute until it begins to brown.
Add broth and salsa and bring to boil.
Reduce heat, cover and simmer for 20 minutes (until liquid is absorbed).
Remove from heat, stir and serve.
Goes great with Mexican dishes as well as many other vegetable mains.
Add some vermicelli and saute with the rice if desired.
Add a sprinkling of Iberico Spanish cheese on top when serving to give it a little zing.
