A creamy and flavourful dressing that's perfect for Caesar salad.
Ingredients
1/2 cup raw cashews, or blanched almonds
1/4 cup (60 mL) water
2 tbsp olive oil
1 tbsp fresh lemon juice
1/2 tbsp Dijon mustard
1/2 tsp garlic powder
1 small garlic clove, minced
1/2 tbsp vegan Worcestershire sauce (Safeway brand)
2 tsp capers
1/4 tsp salt
1/4 tsp black pepper
Preparation
In a blender or food processor, add all ingredients.
Blend on high until the dressing is very smooth.
Place dressing in a sealed container, and refrigerate for at least 1 hour before using.
To serve, mix with pieces of Romaine lettuce and croutons.
You can also sprinkle salad with vegan Parmesan for flavour.
