Like a baked potato with all of the trimmings INSIDE!
Ingredients
8 medium baking potatoes
1 pkg (12 slices) vegetarian bacon, chopped and fried crispy
6 green onions
1 cup grated Cheddar cheese
1/2 cup sour cream
1/2 tsp salt
1/4 tsp pepper
Dash of paprika
Preparation
Bake potatoes in a pre-heated oven at 350 degrees for about 60 minutes.
Remove from oven and let cool enough to touch.
Cut potatoes in half, lenghtwise.
Scoop out insides of potatoes into a bowl, leaving about 1/8" around skin.
Mash the potato insides with cheese, bacon, green onion, sour cream, salt and pepper. Do not use a blender.
Preheat oven to 450 degrees.
Place potato skins on a baking sheet with open ends facing up.
Spoon or pipe the filling into each of the skins evenly.
Bake for about 20 minutes, watching closely, until browned on top.
Sprinkle with paprika before serving.
Serves 8.
If spooning, try fluffing the potatoes with a fork to create small peaks or a ridged design on top before baking.
If piping, use a large 'star-shaped' tip to create a nice ridged swirl.
For a vegan version, skip the cheese, swap the sour cream with unsweetened vegan yogurt (Silk coconut is best), and add 1/2 tsp apple cider vinegar.
