Three amigos surrounded by colourful goodness! A high-protein breakfast.
Ingredients
1 tortilla wrap
1/2 cup refried beans
1/2 cup Spanish Rice
1 cup grated aged Cheddar (or Tex-Mex)
1 tbsp vinegar
3 eggs
3 tbsp corn salsa fresco (or your favourite salsa)
3 tbsp fresh guacamole
Salt & Pepper to taste
Preparation
Place a tortilla wrap flat on a plate.
Spread the beans in a thin layer onto the wrap.
Spread the rice evenly on the layer of beans.
Sprinkle the cheese evenly onto the layer of rice.
Bring a small pot of water to a boil, and add the vinegar.
Crack and drop the eggs into the water, without breaking the yolks, cooking for about 3-4 minutes (use a slotted spoon to carefully check the "jiggle" of the yolk for your preferred consistency).
While eggs are cooking, heat the wrap and layers in a microwave oven for about 1-2 minutes, until the cheese is melted.
When cooked, remove the poached eggs from the pot with a slotted spoon, gently shaking off any excess water, and place them around the centre of the wrap.
Sprinkle eggs with salt and pepper as desired, and drop the salsa and guacamole at several points surrounding the eggs.
