Tangy roasted potatoes that are easy to prepare
Ingredients
8 medium-sized potatoes (peeled and cubed into 1" pieces)
4 garlic cloves (minced)
1/2 Cup vegetable oil
1 Cup veggie chicken stock
1 tbsp dried oregano
1 lemon (juiced)
Salt and pepper to taste
Preparation
Preheat oven to 375° F.
Mix all ingredients together and pour into shallow greased baking dish.
Cover with foil and bake for 40 minutes.
Remove foil and bake for 30 minutes more (until browned).
