A slightly spicy, very peanutty noodle salad
Ingredients
450 ml instant oriental noodles or spaghettini
1/3 Cup grated carrots
4 chopped green onions
1/3 Cup chopped peanuts (dry roasted)
1/3 Cup soy sauce
1/4 Cup vegetable oil
2 tbsp rice vinegar
2 tbsp peanut butter
2 tbsp sugar
2 tbsp toasted sesame seeds
1 finely diced chili pepper
Preparation
Cook pasta according to instructions and rinse thoroughly with cold water.
Combine all other ingredients and mix thoroughly.
Place mixture over noodles and toss until thoroughly combined.
Refrigerate for minimum of 30 minutes prior to serving.
Add 340 g grilled veggie chicken strips for a more substantial dish.
Serves 6.
