A delightfully sweet breakfast treat, a great way to get lots of fruit into your diet
Ingredients
2 chopped bananas
1 chopped apple
1 chopped peach or pear
1 Cup halved grapes (seedless)
1 Cup chopped melon (honeydew or cantaloupe)
1 Cup whipping cream
2 tbsp icing sugar
1 tsp vanilla
3 separated eggs
3/4 Cup flour
1 Cup milk (or soy milk)
2 tbsp vegetable oil
1 tsp sugar
Dash of salt
Syrups for drizzle (chocolate, maple, raspberry, caramel, etc.)
Preparation
Place chopped fruit in separate bowls to serve.
Whip/beat egg whites until stiff.
Heat frying pan until very hot (small amount of oil should start to smoke).
In a batter bowl, beat together flour, egg yolks, milk, oil, sugar and salt until well blended.
Fold egg whites into mixture.
Pour into frying pan and "twirl" pan to spread the batter to the edges.
When it is brown on one side and cooked all the way through, flip the crépe for just a few seconds to remove any moisture on the other side.
Remove from pan and place on a serving plate (crépes should be thin and elastic).
Repeat until all batter is used.
Whip cream until soft peaks form and then add icing sugar and vanilla, then continue beating until stiff peaks form.
Place whipped cream into a serving dish.
Place each crépe flat on a plate, add desired fruit in a line down the middle, add whipped cream, fold each side of the crépe over towards the middle, and drizzle top with desired syrups.
You can substitute any of the fruit for other fruits (try mango, papaya, pineapple and banana for a tropical twist).
To keep apples/pears from browning, soak them in pop (7-Up or Sprite are best) for about 5 minutes.
