Like a veggie burger, similar to crab cakes
Ingredients
2 1/2 Cups grated zucchini
1 lightly beaten egg
2 tbsp chopped onion
1 tbsp melted margarine
1 tsp prepared mustard
3/4 tsp seafood seasoning
1 Cup seasoned bread crumbs (or crushed croutons)
2 tbsp vegetable oil
Preparation
In a bowl, combine the zucchini, egg, onion, margarine, mustard and seafood seasoning and mix well.
Shape into five patties and coat with bread crumbs.
Heat oil in a pan and fry the patties for 4 minutes on each side until golden brown.
Drain on paper towels and serve.
