A flavourful vegetarian seitan that slices like a holiday turkey.
Ingredients
1 1/3 Cups vegetable or vegetarian chicken broth
2 tbsp olive oil
1 1/2 Cups vital wheat gluten flour
1/4 Cup gram or chickpea flour
1/3 Cup nutritional yeast or activated yeast flakes
1 tsp garlic powder
1 1/2 tsp poultry seasoning
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp salt

Preparation
Mix olive oil with broth and chill in freezer for a few minutes.
In a large mixing bowl, stir together all remaining dry ingredients until thoroughly mixed.
Create a well in the centre, then whisk the broth and oil and pour it into the well.
Mix together by stirring the dry ingredients from the edges into the liquid.
Keep mixing until a dough forms, then knead it for a couple of minutes until it becomes firm, elastic and difficult to shape.
Cut in half and shape each piece into a long, narrow loaf (about 2-3 inches in diameter)
Cover tightly in foil and fold ends in, then place in steamer with foil seam down.
Steam for 60 minutes (make sure you have plenty of water in the steamer).
Remove from steamer and cool for 30 minutes.
Preheat oven to 400 degrees F.
Place loaves on a baking tray (keeping foil on) and bake for 30 minutes.
Remove from foil and slice for serving.
Slice thin and serve with gravy.
You can roll it around a stuffing mixture prior to steaming, but it is difficult.
