Lightly breaded veggie chicken covered with green onions and tangy/sweet lemon sauce
Ingredients
8 to 10 veggie chicken patties
1 Cup long-cut green onion
1 1/2 Cups veggie chicken broth (or vegetable broth)
1/2 Cup fresh lemon juice
3 1/2 tbsp light brown (or white) sugar
1/4 Cup corn starch
1/3 Cup agave syrup (or honey if not vegan)
1 tsp grated fresh ginger
Preparation
Bake or panfry veggie chicken patties as directed on package.
Combine the broth, lemon juice, sugar, honey, ginger and cornstarch in a saucepan.
Cook over medium heat until boiling, stirring constantly.
Slice cooked veggie chicken patties into strips and place in deep serving plate/bowl (line with lettuce first if desired).
Pour sauce over veggie chicken.
Sprinkle green onion on top.
Best served with a rice dish and/or the Broccoli Chow Mein.
For a nice garnish, line the serving dish with lettuce before placing the veggie chicken on it.
Serves 6.
