A great meat-like substitute made from wheat gluten
Ingredients
2 Cups vital wheat gluten
1/2 Cup nutritional yeast
2 tsp garlic powder
2 tsp poultry spice
1 1/2 Cups vegetable broth
2 tbsp soy sauce (or low-sodium soy sauce
Preparation
Mix together gluten, yeast, garlic powder and poultry spice in a large bowl.
In a small bowl, mix the broth with the soy sauce.
Add liquid mixture to dry mixture and stir until it makes a dough.
Knead dough for 3 minutes, or until very elastic.
Divide dough with a pastry knife and shape into 2 loaves, dipping fingers into water to shape ends.
Tightly wrap loaves individually in heavy duty foil and twist ends like a Tootsie Roll.
Place wrapped loaves into a steamer and steam for 30 minutes.
Remove and let cool in wrapping.
Seitan can be prepared with different ingredients and spices for different "meaty" flavours.
Different cooking methods, such as boiling in broth or baking instead of steaming, create different textures.
You can freeze it in a Ziplock with or without the foil for a few months.
