Crispy Sage Roasted Cauliflower

Ingredients

• • 1 kg cauliflower broken into 1" chunks

  • 2 tbsp olive oil

  • 1/4 cup butter or margarine

  • 30 whole large sage leaves

  • 1/4 cup chopped pine nuts

  • Salt to taste

Preparation

• 1. Preheat oven to 475 degrees.

  2. Toss the cauliflower in the olive oil in a large bowl and add the salt.

  3. Line a baking sheet with parchment paper and spread cauliflower on top.

  4. Bake for 25 to 28 minutes, until deeply browned.

  5. Melt butter in a pan over medium heat.

  6. Add pine nuts and sage leaves and cook for 3 to 5 minutes, until darkened, crisp, and slightly curled.

  7. Transfer cauliflower to serving dish and pour sage mixture over top.
