A creamy substitute for sour cream... not identical in taste, but very good in its own right.
Ingredients
1 Cup raw, unsalted, whole cashews
1 Lemon, juiced
2 Tsp white or apple cider vinegar
1/2 Tsp sea salt
1/2 Cup soy cream or milk (unsweetened)
Preparation
Soak the cashews in 3 cups of lukewarm water on the counter overnight.
Drain and rinse the cashews and place in a blender.
Add remaining ingredients and puree until smooth.
Transfer to an airtight container and refrigerate until needed.
Great vegan add-on to chili, soup, burritos, and tacos.
