A nice, lemony rice dish that goes well with falafel.
Ingredients
1 1/3 cups raw brown rice
2 cups vegetable broth
2/3 cup chopped carrots
Juice of 1 lemon
3 tbsp olive oil
2 tsp salt
1/4 tsp garlic powder
2 tsp fresh chopped dill
Preparation
In a large pot on medium-high heat, pour in the olive oil, add in the brown rice, and fry for 1 minute.
Pour in the lemon juice, salt, garlic powder, carrots, and vegetable broth, and bring to a boil.
Once boiling, lower heat to medium and simmer with a lid for 25 minutes.
Remove from heat, let stand for 5 minutes, then stir in the dill and serve.
Makes approximately 4 servings
