Great stuffing with plenty of sage. Meat eaters will love it too.
Ingredients
2 pkg Lightlife vegetarian sausage
½ Cup margarine
2 medium Onions, chopped
4 stalks celery, chopped
10 Cups bread cubes (2 pkgs)
3 tsps Poultry seasoning
1 ½ tbsps fresh chopped sage (or 2 tsps dry sage)
2 tbsp fresh parsley
1 ½ Cups veggie chicken stock
½ tsp salt
Dash of black pepper
Preparation
Grease a 140 square inch baking dish.
Pre-heat oven to 350 degrees F.
In a large frying pan over medium-low heat, add margarine, onions, and celery, cooking until soft (about 5-7 minutes).
In a large mixing bowl, add poultry seasoning, sage, parsley, salt and pepper, then toss with bread crumbs.
Add the onions and celery to the bowl, then add the stock and mashed sausage (with hands).
Blend with hands until well mixed, but not mushy.
Cover with foil and bake for 35 minutes.
Remove foil and broil on high for a few minutes until browned.
Serves 10.
Vegan sausage can be Lightlife, Gardein Bratwurst, or Beyond Mild Italian sausage. Thaw before adding.
Can be made a day in advance and kept in fridge prior to baking - add 10 minutes to baking time.
