There's nothing like fresh guacamole on a hot day!
Ingredients
2 shallots
1/2 cup fresh cilantro
5 large ripe avocados, slightly soft when squeezed
2 small limes
1 tsp non-iodized salt (Kosher)
Preparation
Mince the shallots and add them to a large glass container.
Loosely chop the cilantro and add it to the container.
Peel the avocados, remove the pits, loosely chop, then add them to the container.
Juice the limes into the container.
Add the salt to the container.
With a fork, stir the ingredients together, mashing the chunks of avocado, until it reaches the desired consistency.
Smooth the top, cover with cellophane directly on the guacamole, ensuring no air is trapped inside, then cover the container with a lid.
Refrigerate for at least 1 hour before serving.
You can substitute parsley for cilantro, if desired.
Goes great on corn chips, tacos, burritos, omelets, huevos rancheros, burgers, and crackers.
