Flavourful roasted potatoes with veggies and broth
Ingredients
5 or 6 red or yellow potatoes (sliced 1 1/2" thick)
2 Cups vegetable broth (or veggie chicken broth)
2 green peppers (coarsely chopped)
1/2 head of cauliflower broken into large pieces
1 tsp salt
1/2 tsp black pepper
1 tsp ground sage
1 tsp ground allspice
1 tsp chili powder
3 or 4 fresh garlic cloves (minced)
2/3 Cup olive oil
Preparation
In a 9" x 9" baking dish, mix together broth, salt, pepper, sage, allspice, garlic, chili powder and oil.
Place potatoes in sauce.
Place green peppers and cauliflower amongst potatoes.
Cover with tin foil and bake at 350° F for 1 hour.
Serves 8.
